  Assorted Meat in Klyar

Ingredients

2 table spoons of all-purpose flour
2 table spoons of mayonnaise
1 egg
¼ teaspoon household soda
chicken
beef
pork
mutton


Description
This dish is very juicy, fragrant and exquisite. It is good to serve with fresh vegetables

Method
Combine the flour, mayonnaise, egg and household soda and the mixture whisk thoroughly. Chop the meat into 1-15 cm bars across fibers, roll in dry spices and leave for an hour or two. Dip the spiced meat into the klyar and immediately fry in deep fat or vegetable oil.

  Beef-roll

Ingredients

2 cups wheat flour
1 cup kefir
1 table spoon granulated sugar
½ tea spoons household soda
salt to taste
1 kg boiled ground beef
200 g onion
100 g mayonnaise or sour cream
100 g spicy green (marjoram, parsley, basil)
ground black pepper and salt to taste


Method
Combine wheat flour, kefir, granulated sugar, household soda and salt, knead dough, make thin flat cakes 10-20 cm diameter. Coat with vegetable oil. Peel the onion, chop it finely and saute in vegetable oil or any fat. Grind the boiled fat-free meat with a meat grinder. Rinse the greens and chop finely. Combine the meat, onion, greens, salt, ground black pepper and mayonnaise or sour cream, and mix well. Roll out a thin flat cake from unleavened dough and put the ground meat over it. Roll it up and bake in an oven. Remove from the oven. Coat with butter or any fat.

  Beef Cutlets with Cabbage

Ingredients

1 kg beef
200 g green cabbage
50 g onion
50 g parsley
greens
1 egg
1 table spoon of semolina
salt, pepper – to taste


Description
Home-made cutlets enriched with vegetables and spices are recommended both for children and their parents. You may add 50-100 g carrot juice or some fresh black or red currants, which is very good for the intestine. The cutlets can be cooked in vegetable oil or steamed. Choose whatever garnosh you like for this dish.

Method
Shred the cabbage, pour boiling water over it. Wait till it gets cold, then wring out. Peel the onion and grind it with the meat. Combine the ground meat and cabbage with finely shredded parsley, 1 egg, ground black pepper and salt, and mix well. Form it into cutlets, roll in bread crumbs and fry in vegetable oil.

  Beef Stuffed with Sweet Pepper and Brynza (sheep’s

Ingredients

1- 1,5 kg beef chunk
2-3 sweet peppers
200 g Brynza
300 spinach
50 g dill or parsley


Method
Grate the brynza. Rinse the greens, chop them finely and mix with the grated brynza. Stuff the paprika with the grated brynza and greens. Make deep incisions through the chunk on the side – just enough to let in the sweet pepper pods. Roll the stuffed meat in spicy greens, cover with a special cooking net and cook on a baking dish in an oven. Slice the meat for serving. Serve it hot with a vegetable garnish.

  Boeuf Stroganov

Ingredients

Beef tenderloin - 1 lbs. (0.49 kg)
salt - 0.25 teaspoon
pepper - 0.125 teaspoon
2 yellow onions
sour cream - 0.5 lbs. (230 g )
flour - 1 tablespoon
butter - 1 tablespoon


Method
Prepare sauce: boil 1 glass of water. Carefully add flour stirring continuously. Boil 10-15 minutes. Add sour cream and salt. Bring to a boil. Put aside. Chop onions and simmer them with butter at low temperature for 20 minutes. Mix with the sauce. Cut beef into sticks 1.5 -2 in. (4-5 cm.) long and 0.2 in. (2-3 mm) wide. Add salt and pepper. Thoroughly fry at high temperature for 10 minutes and another 10 minutes at low temperature. Add the sauce mixed with onions. Fry for another 5 minutes. Servings: 2-3 with any garnish.

  Juicy/Succulent Beef

Ingredients

fresh beef
tenderloin or sirloin
vegetable oil or lard


Method
Slice the meat for serving and roast the pieces in the vegetable oil or lard. Do not beat or salt them. Serve hot with a sauce or any vegetable garnish.
